Mushroom Chocolate Bark: A Chocolatey Treat with a Twist
Already use functional mushroom powder as part of your daily routine? This homemade chocolate bark offers a fun and delicious way to incorporate the powder you already know and use into an occasional dessert. Just follow the product’s recommended serving directions and remember that the powder will be divided throughout the entire batch.
Let’s be honest. Sometimes we just need chocolate. Whether it is a late-afternoon craving, a stressful day, or simply the fact that chocolate tastes wonderful, there are moments when a handful of carrots is not going to satisfy what we want.
I am not going to pretend this Mushroom Chocolate Bark is health food. It is still chocolate, and that is exactly why it is so good. But it is my version of a chocolatey treat, made with dark chocolate, nuts, seeds, dried fruit, coconut, warm cardamom, and a functional mushroom powder that is already part of my personal routine.
It is a little wholesome, a little indulgent, and just naughty enough to feel like a real treat.
This Recipe Is for People Who Already Use Functional Mushroom Powder
Before we get into the recipe, I want to be clear about who this chocolate bark is for.
This post is not intended to persuade anyone to begin using functional mushrooms or dietary supplements. It does not recommend or suggest that mushroom powder will provide a specific health result.
This is simply a dessert idea for adults who already use a functional mushroom powder, have determined that it is appropriate for them, and would enjoy another way to incorporate their usual product into a homemade recipe.
Because these products are already part of my daily routine, I occasionally look for creative ways to use the mushroom powder I already have at home.
That is how this Mushroom Chocolate Bark came about.
If you do not currently use a functional mushroom powder, this recipe is not a recommendation that you start. You can make the chocolate bark without it or speak with a qualified healthcare professional before adding a dietary supplement to your routine.
Mushrooms Are Having a Moment
Mushrooms seem to be everywhere right now. They are showing up in coffee, drink mixes, powders, capsules, protein blends, and all sorts of foods.
I have been interested in mushrooms for quite a while. Because these products are already part of my routine, I am always looking for simple and creative ways to incorporate mushroom blends into foods I already enjoy.
That is how this Mushroom Chocolate Bark came about.
Mushrooms have a long history of use in traditional food and wellness practices, but dietary supplements should not be treated as medicine or as a replacement for medical care. Research into many mushroom supplements is still developing, and individual products can vary. This recipe is simply a fun way to use a mushroom powder you already have decided it is appropriate for you.
And if there were ever a particularly enjoyable way to take mushroom powder, hiding it in a beautiful piece of chocolate would have to be near the top of the list.
Can You Taste the Mushroom Powder?
No. The dark and milk chocolates have enough richness to carry the mushroom powder without allowing it to take over the flavor. The cardamom also adds a warm, lightly spiced note that works beautifully with the chocolate, coconut, cranberries, and walnuts.
You know the mushroom powder is there, but this does not taste like a mushroom-flavored candy bar.
Why I Leave the Toppings on Top
You could stir all the nuts, seeds, coconut, and dried cranberries into the melted chocolate, but I prefer sprinkling them over the top.
First, it is much prettier. You can see the deep red cranberries, green pumpkin seeds, golden walnuts, and bits of coconut in every piece. It also lets everyone see exactly what is in the bark.
After sprinkling on the toppings, I gently press everything into the warm chocolate. This helps the ingredients stay in place without burying all that beautiful color and texture.

Mushroom Chocolate Bark Recipe
Ingredients
1 bag Lily’s Milk Chocolate Style Baking Chips, approximately 9 ounces
1/3 cup organic shredded coconut
1/2 cup chopped walnuts
1/2 cup organic dried cranberries
1 heaping tablespoon of a Mushroom Powder of your choice
1 teaspoon organic ground cardamom
1-2 pinches of flake sea salt or Pink Himalayan Sea Salt
Note: I used an Organic Super Seed Mix of Whole Flax Seeds and Chia Seeds Blend. Amazon does not carry this product, but I used a similar link for your convenience. Ground flax seed may change the consistency of the bark. Many health food stores carry whole food mixes. You can use any chocolate brand that you prefer, I just happen to love pound plus bars so that is what I use.
Instructions
Line a large, rimmed baking sheet with parchment paper.
Break the dark chocolate bar into smaller pieces and place it in the top of a double boiler with the milk chocolate baking chips.
Gently melt the chocolate over simmering water, stirring occasionally. Do not allow the bottom of the bowl or upper pan to touch the water.
Once the chocolate is completely melted and smooth, remove it from the heat.
Stir the mushroom powder, cardamom, and chia seed and flaxseed mixture into the melted chocolate. Mix until everything is evenly distributed.
Pour the chocolate mixture onto the parchment-lined baking sheet.
Use a silicone spatula to spread the chocolate into an even layer. You can make it thick like a candy bar or spread it more thinly for traditional pieces of bark.
Sprinkle the shredded coconut, chopped walnuts, dried cranberries, and pumpkin seeds evenly over the chocolate. Add one to two pinches of sea salt or Pink Himalayan Sea Salt.
Using clean hands or the back of a spoon, gently press the toppings into the chocolate. Press firmly enough to secure them without completely covering them.
Allow the chocolate to set completely. For faster and firmer results, place the baking sheet in the refrigerator.
Once set, cut the chocolate into bars or break it into smaller bark-size pieces.
A Note About the Texture
This bark is a little softer than traditional dark chocolate bark because I added Lily’s Milk Chocolate Style Baking Chips. I like the slightly softer bite and the balance of milk and dark chocolate.
If you prefer a firmer bark, omit the baking chips and replace them with one-half to one additional Trader Joe’s Pound Plus Dark Chocolate Bar. The exact amount can depend on how thick you want your bark and how many toppings you plan to use.
Keep in mind that changing the type of chocolate may also change how firmly the bark sets.
Make It Your Own
This is one of those recipes that is almost impossible to make the same way twice, and that is part of the fun.
You could substitute or add:
Pecans, almonds, pistachios, or hazelnuts
Cinnamon in place of the cardamom
A small sprinkle of flower petals
Orange zest for a chocolate-orange version
Cacao nibs for extra crunch
A Coffee Mushroom Powder for added caffeine and coffee flavor
A different mushroom supplement powder that you already use
You can also choose milk chocolate, semisweet chocolate, dark chocolate, or a combination. Just remember that some sugar-free and alternative chocolate products may set differently from traditional chocolate.
If you already use a different functional mushroom powder, do not assume it can be exchanged in equal amounts. Products have different ingredients, concentrations, serving directions, and precautions. Follow the label for the exact product you use.
How to Store Mushroom Chocolate Bark
Store the finished bark in an airtight container with parchment paper between the layers.
Because this version is softer, I recommend keeping it in the refrigerator. It can be eaten cold for a firmer bite or allowed to sit at room temperature for a few minutes before serving.
For longer storage, freeze the bark in a freezer-safe container and thaw individual pieces in the refrigerator.
A Note About the Supplement Amount
I used one heaping tablespoon of mushroom powder in an entire tray of chocolate bark. Because the powder is mixed throughout a large batch, homemade pieces will not be perfectly equal, and it is not possible to determine the exact amount of supplement in each piece.
Before making the recipe, read the label on your own product. Consider its suggested use, the total quantity added to the recipe, and the number and size of the finished pieces. Do not exceed the manufacturer’s directions.
If the powder you use has different directions from the product used in this recipe, adjust the recipe accordingly or omit the supplement entirely.
Mushroom Chocolate Bark: A Treat Can Be More Than One Thing.
I think we sometimes make food more complicated than it needs to be. A recipe does not have to be perfectly healthy or completely indulgent. It can live somewhere in the middle.
This Mushroom Chocolate Bark starts with plenty of rich chocolate, then brings in nuts, seeds, fruit, coconut, warming cardamom, and the functional mushroom powder I already use as part of my personal routine.
For someone who already uses functional mushroom powder, it offers a creative way to incorporate a familiar product into an occasional homemade dessert.
That makes it wonderfully customizable, and a little bit naughty.
And sometimes, that is exactly the kind of treat we need.
