They are rich, savory, and loaded with flavor from sun dried tomatoes, parmesan cheese, spinach, and pesto, while the cottage cheese gives them a creamy texture and extra protein without making them heavy.


What I love most about these egg bites is how versatile they are. They work just as well for a quick weekday breakfast as they do for an easy lunch or afternoon snack. They also reheat beautifully, which makes them perfect for meal prep. Around here, I usually keep a batch in the refrigerator for busy mornings when I need something simple but filling.


The combination of Italian-inspired ingredients gives these egg bites a cozy, comforting flavor that feels a little rustic and homemade. The shallots bring a softer, sweeter flavor than onions, while the parmesan adds richness and depth. Topping each egg bite with pesto before baking creates little pockets of herb flavor throughout the bites, it keeps them moist, and if you enjoy a bit of heat, a spoonful of Calabrian chili sauce on top takes them to another level.

Italian Cottage Cheese Egg Bites with Spinach and Sun-Dried Tomatoes

Ingredients:

  • 9 eggs

  • 1 cup cottage cheese, such as Good Culture cottage cheese

  • 1 large shallot or 2 small shallots

  • 1 teaspoon garlic salt

  • Pepper to taste

  • 1/2 cup frozen spinach, thawed

  • 1/2 cup sun dried tomatoes, chopped

  • 1 cup parmesan cheese

  • Basil pesto or pesto of choice

  • Optional topping: Calabrian chili sauce such as Trader Joe's Hot Bomba Sauce

Instructions:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Prepare a muffin pan by lightly greasing it. Silicone muffin pans work especially well for this recipe because the egg bites pop out easily once cooled.

  3. Add the eggs, cottage cheese, shallots, garlic salt, and pepper to a blender or mixer. Blend until smooth and creamy. I use Good Culture because it is a firm less watery cottage cheese with small curds.

  4. Add the thawed spinach and chopped sun-dried tomatoes. Mix again until combined.

  5. Add the parmesan cheese and mix one final time.

  6. Pour the mixture into the prepared muffin pan, filling each cup no more than 3/4 full.

  7. Top each egg bite with about 1 teaspoon of basil pesto or your favorite pesto.

  8. Bake for 17 to 25 minutes, or until the egg bites are firm and lightly golden around the edges without becoming overly browned.

  9. Allow the egg bites to cool slightly before removing them from the pan.

  10. Serve warm with your favorite toppings. I personally love topping mine with Trader Joe’s Hot Bomba Calabrian chili sauce for a little smoky heat.

Tips for the Best Egg Bites

  • Be sure to thaw and lightly squeeze excess moisture from the spinach so the egg bites do not become watery.

  • Silicone muffin pans make removal much easier and help keep the edges soft instead of overbaked.

  • These can be stored in the refrigerator for several days and reheated in the microwave for a quick breakfast.

  • You can easily customize the flavors by swapping the pesto or adding herbs like basil, oregano, or parsley.
