Vietnamese Beef & Shrimp Bún Noodle Bowl

I love a good Bun Bowl. A few years ago, I started making my own bowls and have never looked back. Bun as I know it, is a refreshing bowl of vermicelli rice noodles, grilled meat, fresh herbs & veggies, and a tangy nuoc cham sauce. It is absolutely delicious and refreshing, especially on a hot summer day...but I enjoy a bowl any time!
Vietnamese Beef & Shrimp Bún Noodle Bowl

Ingredients:
For the Beef:
1 lb of lean steak, (sirloin, flap, flank, strip)
Season with garlic salt and pepper and grill until desired wellness
For the Shrimp:
1 lb shrimp (peeled & deveined)
2 cloves garlic (minced)
1 tbsp fish sauce
1 tbsp soy sauce
1 tbsp lime juice
1 tbsp honey or sugar
½ tsp black pepper
1 tbsp avocado oil or oil of choice
For the Noodles & Bowl Components:
6 oz vermicelli rice noodles
1 cup lettuce (shredded)
1 cup bean sprouts
½ cup cucumber (julienned)
½ cup carrots (julienned)-You can buy fresh matchstick size
carrots in the produce section of the grocery store
¼ cup fresh mint leaves
¼ cup fresh cilantro leaves
¼ cup fresh Thai basil leaves
¼ cup crushed peanuts
For the Nuoc Cham Sauce:
¼ cup fish sauce
3 tbsp lime juice
2 tbsp sugar
2 tbsp warm water
1 clove garlic (minced)
1 small Thai chili (sliced, optional)
1/2-1 tsp Spicy Chili Crisp Oil/Sauce to taste
Instructions
1. Marinate the Shrimp
In a bowl, mix the minced garlic, fish sauce, soy sauce, lime juice, honey, black pepper, and oil. Add the shrimp and let marinate for at least 15 minutes.
2. Prepare the Nuoc Cham Sauce
In a small bowl, whisk together the fish sauce, lime juice, sugar, warm water, garlic, Chili Crisp Oil and Thai chili. Set aside.
3. Cook the Noodles
Bring a pot of water to a boil. Cook the vermicelli noodles according to package instructions (usually 3-5 minutes). Drain and rinse with cold water to prevent sticking.
4. Cook the Shrimp & Beef
Heat a pan or grill over medium high heat. Grill the steak until desired wellness, then set aside. Cook the shrimp for about 2 minutes per side until pink and slightly charred. Remove from heat and set aside.
5. Assemble the Bowl
In serving bowls, add a base of lettuce. Arrange bean sprouts, cucumbers, carrots, around the sides of the bowl. Place a bunch of vermicelli noodles in the center of the bowl and add fresh herbs on top. Slice the steak slim and place it and the cooked shrimp over the veggies.
6. Garnish & Serve
Drizzle the nuoc cham sauce over the bowl. Sprinkle crushed peanuts on top. Serve immediately and mix everything together before eating!
Tips & Variations
Add a crispy topping: Try fried shallots for extra crunch.
Make it spicy: Add extra Thai chilies or a drizzle of Sriracha.
Protein swap: Substitute shrimp with grilled pork, chicken, or tofu.
