Since my childhood, there’s just been something nostalgic about cornbread that brings comfort and warmth to certain meals. Whether you’re serving it with a bowl of chili or enjoying it with a hearty stew, Texas style cornbread takes this humble dish to a whole new level. With a perfect balance of sweet and savory, this recipe is sure to become a family favorite.

This Texas style cornbread is a little different from your usual cornbread recipes. The buttermilk creates a moist and soft piece of cornbread because let's face it, there is nothing worse than a dry cornbread. It’s also packed with flavor thanks to the addition of green chilies, corn, and Mexican blend cheeses, all of which create a hearty and delicious bite.   • 8 tbsp sugar

  • 8 tsp baking powder

  • 1 tsp salt

  • 2 cups buttermilk

  • 2 large eggs

  • 1/2 cup light olive oil

  • 1 (15 oz) can corn, drained

  • 1 (7 oz) can diced medium green chilies, drained

  • 1 cup Mexican blend shredded cheese

Instructions:

  1. Preheat and Prepare:

    Preheat your oven to 400°F. Grease a 14x10x3-inch baking dish with oil or non-stick spray. This is a deep dish recipe since the cornbread will rise as it bakes. If you don’t have a 14x10x3 dish, you can split the batter into two smaller baking dishes (such as two 9x9-inch pans) or cut the recipe in half, but be sure to adjust the baking time accordingly.

  2. Mix Dry Ingredients:

    In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir until evenly mixed.

  3. Mix Wet Ingredients:

    In a separate bowl, whisk together the buttermilk, eggs, and olive oil until fully combined.

  4. Combine Everything:

    Add the wet ingredients to the dry ingredients and mix using a mixer on medium speed until everything is well incorporated. You’ll notice the batter is thick, and that’s just how we want it!
