It was my first time...and not all of them came out the same size, nor were they all tightly wrapped. They weren't pretty, but I made it happen and, in the end, they were delish and that's all that matters. This is a fun, artistic and messy way to make dinner but it's also a way to get the whole family involved, like with pizza night or like Christmas Tamale making sessions. Light, fresh, and endlessly customizable, rice paper spring rolls are one of those meals that feel just as fun to make as they are to eat. There’s something about laying everything out on the table, dipping the delicate rice paper into warm water, and building each roll by hand that turns dinner into a slow, creative process.

For this session I used:
I did not use measurements for this part; I used 1 package of rice papers and pretty much 1 bunch of everything and used as much as I needed until all of the rice papers were used up. The remaining ingredients went into the fridge. Depending on the ingredients that you choose, amounts will vary.
large round rice paper wrappers
1/2 red cabbage, thinly sliced to start
cucumber, julienned
bean sprouts
romaine lettuce, very thinly shredded
fresh cilantro leaves
fresh mint, roughly chopped
shrimp, peeled, deveined, and cooked

Preparing the Filling
Before you begin rolling, prep everything so it’s ready to go:
Cook the shrimp until just opaque, then let them cool
Slice the cabbage and lettuce into very thin strips for easy rolling
Cut the cucumber into matchsticks
Wash and dry your herbs and bean sprouts.
Lay everything out in small bowls or on a large board so you can build each roll with ease.
How to Make Rice Paper Spring Rolls
Fill a shallow dish or large plate with warm water.
Dip one rice paper wrapper into the water for about 10-15 seconds, just until it softens. It should still feel slightly firm when you remove it.
Lay the softened wrapper flat on a clean surface.
Start layering your ingredients in the lower third of the wrapper:
A small handful of romaine and cabbage
A few cucumber strips
Bean sprouts
Fresh herbs
2 to 3 shrimp
Fold the bottom edge over the filling, then fold in the sides, and roll upward tightly but gently, like a burrito.
Set aside and repeat with remaining wrappers.

Don’t overfill. A lighter hand makes rolling easier
Keep your ingredients evenly distributed for a balanced bite
The rice paper will continue to soften as you work, so don’t soak it too long

Creamy Chili Honey Peanut Sauce
A rich, velvety peanut sauce layered with sweet honey, warm spice, and gentle heat. This is the perfect companion to the fresh, crisp spring rolls.

Ingredients
1/2 cup creamy honey roasted peanut butter
3-4 tbsp hoisin sauce, more if you like it sweet
1 tbsp soy sauce
1 tbsp honey
1 tbsp rice wine vinegar
1 tbsp fresh lime juice
1 to 2 tsp sesame oil
1 to 2 tsp chili garlic paste
1 tsp chili crisp, fried chili in oil
2-3 cloves garlic, finely minced
1 to 2 tsp fresh or jarred ginger, minced or grated
Pinch of Chinese five spice
Salt and black pepper to taste
3 to 5 tbsp warm water
Instructions
In a bowl, whisk together the peanut butter, hoisin sauce, soy sauce, honey, rice vinegar, lime juice, and sesame oil until smooth.
Add the garlic, ginger, chili garlic paste, and chili oil, and stir to combine.
Sprinkle in the Chinese five spice, then season lightly with salt and pepper.
Slowly whisk in warm water, one tablespoon at a time, until the sauce becomes smooth and pourable.
Taste and adjust as needed.
