Cod & Shrimp Seafood Soup: A Light and Flavorful Bowl of Comfort

If you’re looking for a simple yet satisfying seafood soup, this recipe is perfect. It’s packed with fresh flavors from cod, shrimp, and aromatic herbs, all simmered in a flavorful broth. The best part? It comes together with minimal effort and makes for a comforting meal any time of year.


Cod & Shrimp Seafood Soup

I love Cioppino but I don't always have access to a wide variety of seafood options where I live. One night, I decided to use what I had on hand, and you know what, it turned out pretty good! If you don't have access to fresh seafood that's okay, frozen works beautifully!


Cod & Shrimp Seafood Soup Ingredients:

  • 2lbs Cod Fillets, fresh or frozen

  • 1 lb shrimp, peeled and deveined

  • 1 (14.5 oz) can petite diced tomatoes

  • 1 tbsp tomato paste

  • 1 small fennel bulb, chopped (including leaves)

  • 1 small onion, diced

  • 8-10 garlic cloves, minced

  • 1/2 tsp red chili flakes

  • Pinch of dried Thyme or Italian Seasoning, to taste

  • 6-8oz dry white wine

  • A handful of fresh basil, chopped

  • 1 bay leaf

  • Handful of fresh Parsley chopped

  • 8 cups (2 boxes) of seafood stock or chicken broth. (The fish stock at my local market is always out, so one day I used chicken broth instead, and it turned out great! The broth is light and allows the flavor of the cod to really sing.)

  • Salt and pepper, to taste

  • 2 tbsp olive oil

Instructions:

  1. Sauté the Aromatics Heat olive oil in a large pot over medium heat. Add the diced onion and fennel, cooking until softened (about 5 minutes). Stir in the minced garlic and cook for another minute until fragrant. Stir in tomato paste.

  2. Deglaze with White Wine Pour in the dry white wine and let it simmer for about 2-3 minutes, scraping up any bits from the bottom of the pot. This enhances the depth of flavor in the soup.

  3. Build the Flavor Add the can of diced tomatoes with their juices and the bay leaf. Season with dried herbs, salt and pepper. Let everything simmer for 5 minutes to allow the flavors to meld.

  4. Add the Broth Pour in the broth and bring the mixture to a gentle boil. Add 1/2 of the fresh parsley and basil. Reduce the heat and let it simmer for 10 minutes.

  5. Cook the Seafood Add the cod and shrimp to the pot. Simmer for about 5-7 minutes, or until the fish flakes easily with a fork and the shrimp turns pink

  6. Finish with Fresh Herbs Stir in the remaining chopped basil and parsley and give the soup a final taste for seasoning. Remove the bay leaf before serving.

  7. Serve and Enjoy Ladle the soup into bowls and enjoy it as is, or pair it with crusty bread for a more filling meal.
