Baked Eggs with Tomato and Goat Cheese: An Easy Breakfast Ready in Under 30 minutes.

There’s something so comforting about a meal that feels both rustic and elegant, and baked eggs deliver exactly that. Whether you serve them for breakfast, a light lunch, or even a cozy dinner, they’re rich, satisfying, and endlessly customizable. The beauty of baked eggs is how simple they are to prepare; just a few ingredients, one small dish, and the oven does the rest.

This weekend I made baked eggs in my small ceramic baking dishes, each perfectly sized for one serving. The presentation feels personal and special, and the recipe itself couldn’t be easier.


Baked Eggs with Tomato and Goat Cheese

Ingredients (for 2 single-serve baking dishes)

  • 7 oz (about 1/2 cup + 3 Tbsp) crushed tomatoes, divided

  • 2 tsp zesty Italian seasoning, divided (or to taste)

  • Salt and freshly ground black pepper, to taste

  • 4 large eggs (2 per dish)

  • ⅔ cup goat cheese, crumbled (about 1/3 cup per dish)

  • 2 tsp extra-virgin olive oil, divided

Instructions

  1. Preheat oven to 375 degrees. Lightly grease two small ceramic baking dishes.

  2. Spoon about 3.5 oz of crushed tomatoes into the bottom of each dish. Sprinkle each with ½ tsp of Italian seasoning, plus a pinch of salt and pepper.

  3. Crack two eggs gently over the tomatoes in each dish.

  4. Top each dish with 1/3 cup of crumbled goat cheese.

  5. Drizzle 1 tsp olive oil over each, then sprinkle with another 1/2 tsp of Italian seasoning.

  6. Place the dishes on a baking sheet for easy transfer. Bake for 15–20 minutes, or until the whites are set but yolks are still slightly runny (or cook longer if you prefer firm yolks).

  7. Remove from oven, let cool slightly, and serve with crusty bread for dipping.


This recipe is so simple! I have put together a few additional recipes that could be alternatives or additions to your favorite version.

Spinach & Feta Baked Eggs

Ingredients per dish

  • Handful of fresh spinach, sauteed until just wilted

  • 2 eggs

  • 2–3 cherry tomatoes, halved

  • 3 Tbsp crumbled feta cheese

  • Oregano, salt, and pepper to taste

Instructions

Layer sauteed spinach in the bottom of the baking dish, crack two eggs over it, top with cherry tomato halves and crumbled feta, season, and bake at 375 degrees until eggs are set to your liking.


Mushroom & Parmesan Baked Eggs

Ingredients per dish

  • 1/2 cup sliced cremini mushrooms, sauteed in 1 tsp butter with garlic and thyme

  • 2 eggs

  • 2 Tbsp grated Parmesan cheese

  • 1 Tbsp heavy cream or half and half

  • Salt and pepper to taste

Instructions

Spread the sauteed mushrooms in the dish, crack in two eggs, drizzle with cream, top with Parmesan, season, and bake at 375 degrees until done.

Baked eggs are endlessly versatile and a great way to use up whatever you have on hand. Leftover Zucchini? Throw it in. Ground sausage? Throw it in. They’re quick enough for weekday mornings yet special enough for weekend brunch with friends. By baking them in small ceramic dishes, you not only get perfect portions, but also a beautiful presentation that feels restaurant worthy without any fuss.
