  • Liquid: Opt for beef broth or stock for a rich taste. Adding a cup of red wine enhances the flavor profile with its acidity and depth. In fact, wine can increase the complexity of flavors, adding a different layer to your pot roast.


  • Seasonings: Salt, pepper, garlic, thyme, and bay leaves are traditional choices that complement the pot roast beautifully. Consider using two teaspoons of thyme and two bay leaves for an aromatic kick.


  • Fat: A little oil or butter is necessary for browning the meat, boosting the overall flavor. Using two tablespoons of olive oil is just the right amount for a flavorful sear. I also like using Grass Fed Beef Tallow; however, you may use whatever you prefer.

Step by Step Recipe for Slow Roasted Pot Roast


Now that you have all your ingredients ready, here’s a simple recipe for a slow roasted pot roast. I like using a thick cut chuck roast because it is marbled with fat which produces a very moist and flavorful pot roast.


Ingredients


  • 3 to 4 pounds of chuck roast

  • 4 large carrots, chopped

  • 4 medium potatoes, diced

  • 1 large onion, quartered

  • 4 cloves of garlic, minced

  • 2 cups beef broth

  • 1 cup red wine (optional)

  • 2 tablespoons olive oil

  • 2 teaspoons dried thyme

  • 2 bay leaves

  • Salt and pepper to taste


Instructions

  1. Preheat Your Oven: Start by preheating your oven to 325°F (165°C).


  2. Prepare the Meat: Pat the roast dry and season it generously with salt and pepper.


  3. Sear the Roast: In a large Dutch oven or oven safe pot, heat olive oil over medium-high heat. Sear the roast on all sides until it’s nicely browned. This step adds depth to the flavor.


  4. Add Aromatics: Once seared, remove the roast from the pot and set aside. In the same pot, add chopped onions and cook for 2-3 minutes until softened. Add garlic and cook for an additional minute.


  5. Deglaze the Pot: Pour in the red wine (if using) and scrape the bottom of the pot to release all the flavorful bits stuck to it. Let it simmer for a few minutes to reduce slightly.


  6. Combine Ingredients: Return the roast to the pot. Add the broth, carrots, potatoes, thyme, and bay leaves on top of and around the roast. Make sure the liquid almost covers the meat.


  7. Roast in the Oven: Cover the pot with a lid and place it in the preheated oven. Slow roast for 3 to 4 hours, or until the meat is fork tender. Many cooks find that after three hours; the meat will start to pull apart beautifully.


  8. Serve: After cooking, remove the pot from the oven and let it rest for about 10-15 minutes. This resting period keeps your roast juicy. Serve with your favorite side dishes and enjoy!


    Simple Pot Roast Gravy (from Drippings)

    Ingredients:

    • 2 cups pot roast drippings (strained)

    • 2 tbsp all purpose flour (or cornstarch for gluten-free)

    • 2 tbsp butter (optional, for richness)

    • Salt & black pepper to taste


    Skim the fat from the top of your drippings (unless you like a richer gravy).

    In a saucepan, melt butter over medium heat (or use a bit of the fat from the drippings). Whisk in the flour to make a roux. Stir constantly for 1–2 minutes until lightly golden. Slowly whisk in the drippings, stirring to avoid lumps.

    Simmer for 5–10 minutes, stirring occasionally, until thickened.

    Season with salt and pepper to taste.
